It’s healthy; it’s beautiful and the unique combination of sweet fruit with fresh herbs, citrus and jalapeno will surprise you.

Organic Watermelon Gazpacho
From the Kitchen of Blue Osa
Gluten Free, dairy free, fat free & vegetarian
Ingredients:
6 c. watermelon (organic if available)
1 c. lemon juice
2 Tb honey
1/2 c. basil
1/4 c. mint
1/2 cilantro
1 cucumber
1 c. orange juice
1 t. jalapeno chili
1 red pepper
salt and pepper
Preparation:
- Remove the rind and seeds from the watermelon.Place the fruit in the blender and pulse a few times; leave it slightly chunky.
- Coarsely chop the rest of the ingredients and combine them in a bowl. Put this mixture into the blender and pulse several times. Don’t puree.
- Combine this with the watermelon and mix by hand, adding salt and pepper to taste.
- Chill, then serve garnished with mint.
