From the Kitchen of Blue Osa
Makes 6-8 servings
Ingredients:
10-ounce packet of uncooked lentils
1 can unsweetened coconut milk
2 garlic clovers finely chopped
1 medium onion finely chopped
2 tablespoons olive oil
1 tablespoon chopped peeled fresh ginger
1 teaspoon ground cumin
1 teaspoon of curry or turmeric
1/2 teaspoon coriander power
1 teaspoon salt
2 cup water
1 cup fresh cilantro chopped
Preparation:
1. Soak lentils over night
2. In a large pot saute onion with oil over medium heat for 6 minutes, stirring occasionally until the edges become golden
3. Add ginger and garlic, saute for 1 minute
4. Add cumin, coriander, turmeric/curry, salt and pepper, stir for 2–3 minutes
5. Add water, lentils, and coconut milk
6. Cover and allow to simmer for 10 minutes, stirring occasionally.
7. Add salt and pepper for taste
8. Serve hot
